Heart Shaped Isomalt Lollipops Made Easy

Who knew pairing Red Aqua Blend with Porcelain Lustre Blend would create the shiniest, most shimmery lollipops you’ve ever seen? These sparkling heart shaped treats are easy to make and shine in all settings!

Ingredients

Tools

  • Lollipop Stick
  • Heart Shaped Cookie Cutter
  • Silicone Mat
  • Small Palette Knife
  • Thermometer

Method

Melt the Isomalt

  • Place the Isomalt Crystals into a clean, dry saucepan.
  • Heat over medium to low heat, stirring constantly with a silicone spatula to ensure even melting.
  • Continue to heat until the isomalt reaches 160°C (320°F). Use your thermometer to monitor the temperture precisely.

Add Colour & Shine

  • Now that your isomalt is fully melted and clear, add a small amount of Red Aqua Blend until you reach the desired colour and combine completely.
  • Sprinkle Porcelain Lustre Blend into the mixture and stir gently to create the shiny, shimmering effect.
Add a small amount of Red Aqua Blend and combine completely.
Mix in Porcelain Lustre Blend for a shiny finish.

Shape the Lollipops

  • Place a heart shaped cookie cutter on a silicone mat or baking paper.
  • Pour the melted isomalt into the cookie cutter, filling it a quarter of the way.
  • Wait approximately 5 minutes for the base layer to slightly cool and firm.
  • Carefully remove the cookie cutter, avoiding disruption to the shape.
  • Insert a lollipop stick into the centre of the heart.
  • Fill the space on top of the lollipop stick with melted isomalt, covering the stick.
  • Use a small palette knife to smooth and refine the heart shape while the isomalt is still pliable.

Cool & Set

  • Allow the Heart Lollipops to cool completely on the silicone mat for approximately 15-20 minutes or until fully hardened.
  • Once set, gently lift and remove the lollipops from the mat.
Pour the melted isomalt into the cookie cutter, filling it a quarter of the way.
Smooth and refine the heart shape with a small palette knife.
