Kohakutou Crystals are often enjoyed as a standalone treat or used as decorative elements in desserts, such as cakes, pastries or ice cream. Experiment with different flavours and colours to create a diverse assortment of crystals, introduce different mould shapes, add dried flavours or edible pearls!
Step 1 - Place your cool water into a medium-sized saucepan and sprinkle the Agar Agar Powder over the water, letting it absorb for 5 minutes.
Step 2 - Bring the mixture to a simmer and cook for 2-3 minutes stirring constantly with a spatula.
Step 3 - Sprinkle in your sugar and continue cooking for another 2-3 minutes.
Step 4 - Remove from heat. Add in your chosen flavouring extract and citric acid.
Step 5 - Pour out 4 bowls of roughly 150-200mL of your mixture, colouring each with your desired Aqua Blend colours. For more colours, pour out more bowls.
Tip - For a shimmery crystal effect, mix Lustre Blend edible lustre powder into a few of your colours.
Step 6 - Pour your uncoloured mixture into a lightly oiled, preferably square, cake tin.
Step 7 - Pour your coloured mixtures on top and lightly swirl with a silicone spatula.
Step 8 - Place the container into the fridge for 2-3 hours until set.
Step 9 - Remove the set gummy from the container and cut into crystal shapes using a sharp knife.
Step 10 - Dust with Colour Mill White Glitz Blend
The jelly crystals may now be eaten! If you prefer a harder candy, place the crystal gummies onto a parchment-covered cookie sheet and let dry at room temperature for 2-3 days until a hard crust forms on the outside.
Store up to two weeks in an air tight container.
