Method

Make your Dough

  • Mix the milk, yeast and 5g of caster sugar in the bowl of your stand mixer with the hook attachment. Leave it for 5-10 minutes.
  • Add a few drops of Colour Mill Hot Pink and mix well.
  • Add the eggs and the sifted flour and mix for 5 minutes. After that leave the dough in the bowl to rest for 10 minutes.
  • Add the soft butter, salt and sugar and mix for another 15-20 minutes, until the dough is soft.
  • Rest the dough in a warm place for 60-90 minutes, until it’s doubled in size. (At this stage you can leave it in the fridge overnight to rest. If you do this, just let the dough rest in a warm place for just 30-45 minutes and then transfer it into the fridge).

Make the Cinnamon Filling

  • While your dough is resting, let's make the filling!
  • Mix all the cinnamon filling ingredients together in a bowl and put aside.

Assemble the Cinnamon Scolls

  • Roll the dough into a square (¼” thickness) and spread the cinnamon filling on top.
  • Roll the longest side of the square toward the centre and do the same thing with the opposite side - refer to video below!
  • Using an unflavoured dental floss, cut the log and shape the slices into a heart.
  • Move them onto a baking tray, cover and leave them to rest for 30-45 minutes.
  • In the meantime, preheat a fan forced oven to 175C.

Bake the Scrolls and Make the Frosting

  • Bake the scrolls for 25-30 minutes.
  • Once they are baked, remove them from the oven and let them chill at room temperature.
  • While the scrolls are cooling down, let's make the frosting!
  • Place all the ingredients into a bowl and mix using a whisk attachment or hand held mixer until smooth and lump free.
  • Be careful not to over mix otherwise the frosting will become too soft!

Ice the Cinnamon Scrolls and Enjoy!

  • Using an offset palette knife frost the scrolls with your pink icing!
  • Decorate with sprinkles or any additions of your choice!
  • Enjoy!
